Mediterranean Stuffed Bell Peppers
Ingredients:

4 bell peppers (any color)

1 cup cooked quinoa (optional, can be substituted with rice or couscous)

1 can of chickpeas, drained and rinsed

1 small red onion, finely chopped

1 tomato, diced

1/2 cup crumbled feta cheese (optional)

1/4 cup chopped fresh parsley

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste
Instructions:

Preheat the oven to 375°F (190°C).

Cut off the tops of the bell peppers and remove the seeds and membranes. Place them in a baking dish.

In a mixing bowl, combine the cooked quinoa, chickpeas, red onion, tomato, feta cheese, parsley, olive oil, dried oregano, salt, and pepper. Mix well.

Stuff each bell pepper with the filling mixture.

Cover the baking dish with foil and bake for about 30-35 minutes or until the peppers are tender.

Remove the foil and continue baking for an additional 5-10 minutes to lightly brown the tops.

Remove from the oven and let them cool for a few minutes before serving.
